This is one of the most elevated specialty coffees on our menu — a washed Ethiopian light roast from the birthplace of coffee itself, grown at 7,000 feet where the altitude, the soil, and the processing combine to produce something genuinely rare. The name comes from the lake where Lake Born began. The winds on that lake blow south to north — and when it's time to cast off, you catch the south winds to set sail. South Winds is that feeling in a cup. The one that signals something is about to happen. The one that moves you.
Sourced from the Yirgacheffe region of Ethiopia — the region widely considered the origin point of coffee as we know it — grown at approximately 7,000 feet and processed using the washed method, which strips the cherry cleanly from the bean and lets the coffee's natural character speak without interference. The result is a cup with the kind of floral clarity and fruit-forward brightness that makes even seasoned coffee drinkers stop and pay attention.
How to brew it:
Pour over — brings the bright floral and citrus notes forward with precision. The clean filter lets the jasmine and peach shine through exactly as intended.
Aeropress — the best way to experience this coffee's single-origin clarity. Concentrated, tea-like, and surprisingly delicate. A completely different side of the same bean.
Clever immersion brewer — the full steep gives the floral and citrus notes more contact time to fully develop, while the paper filter keeps the cup clean rather than heavy. Pour-over clarity with a touch more sweetness and body.
